A Cozy Catskills Getaway at Postcard Cabins

There’s something about a cabin weekend that always makes us slow down. A couple of nights away, a fire outside, good food, and nowhere we really need to be is sometimes exactly what we’re looking for.

For this trip, we spent two nights at Postcard Cabins in the Catskills. We kept our plans intentionally light, with a little time exploring nearby towns and plenty of time back at the cabin.

Staying at Postcard Cabins Catskills

One of the things I like about Postcard Cabins is that the cabins are small, but they have pretty much everything we need for a weekend away.

The large picture window next to the bed is still one of my favorite features. You can wake up surrounded by trees without ever leaving the bed, and it makes the small cabin feel much more open.

There’s also a small kitchenette with a mini fridge, two-burner stove, sink, cookware, dishes, and utensils, along with a private bathroom and hot shower.

There’s also a bench next to the bed with plenty of storage underneath, which gave us a convenient place to keep our bags out of the way.

There isn’t a ton of extra space, but for two people and a couple of nights, we had everything we needed.

Outside, each cabin has its own area for sitting around the fire. We ended up spending a lot of our time here, especially once the sun went down.

The outdoor setup is a big part of why we enjoy these cabin trips. You still get to make a fire, cook outside, and spend the evening surrounded by trees, but there’s a comfortable bed and hot shower waiting for you inside.

A Little Busier Than We Expected

One of the first things we noticed about the Catskills location was that it seemed much busier than what we were used to. Almost every cabin appeared to be occupied during our stay.

At first, I wondered if that would make it feel less peaceful, but surprisingly, it didn’t bother us at all. The cabins were spaced far enough apart and everything stayed quiet enough, that we still felt like we had our own little corner of the woods.

Every once in a while we’d see someone walking by or sitting outside their cabin, and it almost felt like, hello, friend. I guess you’re here to get away too.

Once we settled in, we still had the quiet, relaxed weekend we came for.

Our 3-Day Catskills Getaway

Day 1: Settling In

We kept our first night exactly how I like to start a cabin trip: slow.

After unpacking and getting settled, we heated up leftover lasagna I’d made a few nights earlier for dinner. Maybe it was the cabin or maybe lasagna is simply an underrated cabin meal, but it was such a good first dinner.

My husband made a fire afterward, and we spent the rest of the evening outside enjoying it. Nothing ambitious, which was exactly what we wanted.

Day 2: Coffee, Cats & a Very Good Campfire Dinner

The next morning, we ate an easy breakfast at the cabin before heading out for coffee. We’d brought chia seed pudding, yogurt and granola, bananas, and hard-boiled eggs from home, so we didn’t have to think about making anything that morning.

Then, we drove about 10 minutes to 27 Cafe. It was hip, relaxed, and immediately felt like our kind of place. I ordered an iced oat milk latte, and we stayed for a while just drinking our coffee and talking.

Afterward, we walked around town and started noticing cat sculptures scattered around, which was such a quirky little detail.

We stopped at Kirwan’s Game Store, which was huge and packed with board games, Pokémon cards, Funko Pops, and plenty of other things to browse. My husband had a blast looking through the Pokémon cards and ended up taking a few home.

We also wandered into Spike’s Record Rack. The shop was incredibly organized and had a large selection to look through. We took our time browsing and left with a Stevie Wonder record.

And for lunch? McDonald’s. Because sometimes that’s exactly what you want.

Dinner back at the cabin ended up being one of the highlights of the entire trip. We made steak skewers with mushrooms, onions, and peppers over the fire, along with foil-wrapped potatoes and corn.

We added salted butter and a little cream cheese to the potatoes and made Shin ramen black to have with the skewers. It turned into a full-on feast, and somehow eating it outside by the fire made everything taste even better. My husband and I couldn’t stop talking about the smoky flavor from cooking over a real fire. It was easily one of our favorite meals of the trip.

We stayed up playing Everdell and Uno before ending the night with s’mores.

Postcard Cabins had left us stroopwafels instead of graham crackers and what I can only describe as a little chocolate splat instead of a traditional chocolate bar. It was a fun twist, but the stroopwafel version was sweeter than I expected. I only ended up taking a bite or two, but we still enjoyed trying something a little different.

Peep my husband warming up the whole stroopwafel s’more with the tongs, haha!

Day 3: One Last Coffee

On our last morning, we picked up bagels from Goodies Bagels and found ourselves back at 27 Cafe for another coffee.

We ate our bagels outside the café, drank our coffee, and talked about the past couple of days before eventually heading home.

It was such a simple way to end the trip, but probably one of my favorite moments. We were sitting outside together, completely content with how we’d spent the weekend.

Things to Know Before Staying at Postcard Cabins Catskills

Bring more drinking water than you think you’ll need. We received two bottles of water per day, but we brought around 20 extra bottles and were surprisingly glad we did. We went through almost all of them by the end of the weekend.

Pack your own cooking basics. Our cabin didn’t have cooking oil, so I’d bring oil or butter along with any seasonings you plan to use. We also didn’t have a dish sponge when we arrived, but after texting the provided number, someone brought one to our cabin within about five minutes. We were really impressed by how quickly they responded.

Take advantage of the firewood. Firewood (and firestarters) was included with our destination fee, and there was plenty of it. I loved not having to ration every piece of wood or wonder whether we’d need to buy more. We kept a fire going for much of our time at the cabin and still had wood to spare.

Definitely bring insect repellent. You’re in the woods, and you’ll probably want to spend quite a bit of time outside by the fire.

Bring plenty of your own food and snacks. Our stay included a few things like oatmeal, Smartfood popcorn, hot chocolate, tea, and coffee, but we barely touched them aside from the popcorn. We were much happier having our own snacks, breakfasts, and ingredients for meals we actually wanted to eat.

A hanging toiletry bag was surprisingly useful. Being able to hook ours onto the wall and keep everything together made the small bathroom much easier to use. It’s one of those little things I’d absolutely bring again.

Would We Stay Again?

Absolutely.

The Catskills location gave us the quiet cabin weekend we wanted while still being close enough to coffee shops and a few places to explore when we felt like getting out.

We didn’t pack the weekend with plans, and I’m glad we didn’t. Good coffee, a few finds around town, dinner over the fire, and plenty of time at the cabin ended up being more than enough.
